About the course

This course provides students with an opportunity to develop a wider range of complex skills and to further develop their knowledge to a higher level relating to the production of cakes, bread, rolls, gateaux, pastries and the essentials of cake decoration.

What will I learn?

The content centres on the further development of skills and knowledge relating to the creation of bakery products, including:

  • Freshly baked breads and rolls including continental products
  • Pastries, pies, flans and tarts including continental products
  • Cakes, gateaux, slices and creams including continental products
  • Essential Food Safety and Hygiene

How will I be assessed?

Assessment is continuous assessment through out the period of the course including practical tests and written questions.

What are the entry requirements?

Students should have completed Level 1 Craft Baking or have relevant industrial experience. Students may be asked at interview about their level of industrial experience and how this fits in to the course. The programme is open to everyone, whether employed or not.
