About the course
This qualification is aimed at anyone wishing to acquire the knowledge, understanding and current industrial practices of the food manufacturing industry which at present is the UK’s largest area of employment. The qualification is designed where on satisfactory completion of unit achievements, the learner may be awarded either the award, certificate or diploma.
What and how do you learn?
The content of the course is such that it covers a broad range of technical and practical skills. There is a mandatory unit that culminates in an on-line examination
One optional unit leads to the award, where three optional units leads to an award and four optional units leads to the diploma. Students are encouraged to work towards the diploma which enhances both their skills and knowledge base. It also gives greater opportunities with regard to their employability, due to a broader range of skills and knowledge that is acquired by studying the increased number of units required for the diploma.

Bread & fermented products pathway
- Produce and divide advanced craft fermented dough in food manufacture.
- Process advanced craft fermented goods in food manufacture.
- Prove and bake advanced craft fermented goods in food manufacture.
- Finish advanced craft fermented goods in food manufacture.
Pastry pathway
- Produce advanced craft pastry products in food manufacture.
- Process advanced craft pastry products in food manufacture.
- Bake advanced craft pastry products in food manufacture.
- Finish advanced craft t pastry products in food manufacture.
Flour confectionery pathway
- Produce advanced craft flour confectionery products in food manufacture.
- Process advanced craft flour confectionery products in food manufacture.
- Bake advanced craft flour confectionery products in food manufacture.
- Finish advanced craft flour confectionery products in food manufacture.
The student may take any four from the list of optional units (through negotiation between the tutor and student), to create their own ‘bespoke’ qualification along with the mandatory unit. However, the student would always be encouraged to follow a ‘pathway’ in order to ensure the qualification meets the requirement of breadmaking, pastry making or flour confectionery production. Typically, most students will complete 17 units in order to achieve a more rounded education in bakery training and practices.
Qualifications required to start
There are no formal entry requirements, however typically we would welcome either a Level 2 food manufacturing (or similar qualification), or relevant industrial experience or position; e.g, practical production and craft experience or position of technical, new product development, quality assurance/control, bakery and production management. Above all else a determined commitment to succeed and excel, plus the ability to manage time in order to meet assignment deadlines.
After the course
Many students go into the world of manufacturing working with key companies such as Nestle, Associated British Foods, Northern Foods along with other more specific areas of bakery manufacture such as Cooplands, Ainsleys, Betty’s to name but a few. Bakery and production Management, New Product Development and Technical support are career options that may be considered. If more education is required by the learner the college offer a foundation degree in food science and manufacturing technology which can be topped up at a suitable university. Applications to any other university may be considered by the university that is applied to where the application will be considered on its own merit and depending on the university’s own criteria. Higher education courses to consider would be Food Science, Food Technology, Diet, Food and Nutrition, Environmental Health Studies.
