About the course

This qualification has been designed to meet the needs of learners who want to work as professionals within the hospitality and catering sector.

What will I learn?

Students will learn to cook a range of international and classical dishes focusing on current trends and dish development. Students will also learn to prepare, cook and present starters, main courses and desserts to meet the requirements of a range of establishments. Students will combine the cookery programme with an additional qualification at Level 1 in restaurant and bar cellar work. There is also the opportunity to participate in European exchanges.

You will learn to:

  • Build on the practical knowledge and skills to be able to work in a competent manner within a professional catering environment.
  • Prepare and cook a wide range of starters, main courses and desserts.
  • Learn a wide range of food and drink service.
  • Learn about bar and cellar operations, licensing law and develop a responsible attitude to the promotion of alcohol.
  • Personal development – communication skills and Information Technology within the catering industry.

You may have the opportunity to join the hospitality competition team.

How will I be assessed?

Students will have theoretical assignments to complete. Practical skills will be tested with synoptic tests at the end of the year to achieve the relevant grade pass/credit/distinction.

What are the entry requirements?

Minimum of three GCSEs at grade A to C. Students must also have a proven interest in the catering industry.

Future Opportunities

Students may wish to progress onto the VRQ Level 2 Diploma in Professional Cookery and Food and Beverage Service, or find employment and continue as an apprentice, specialising in an area of the Hospitality Industry.
